MINT & CORIANDER CHUTNEY (http://www.blandisboring.com/chutney)

2 cups fresh coriander, leaves and stems
¼ cup of mint leaves
1 green chili (or to taste)
3 tbsp yogurt
Juice of ½ lime
½ tsp salt
½ small tomato
½ small onion

Optional ingredients: fresh ginger, fresh garlic, cumin seeds and coconut milk (or cream) in place of yogurt.

Place all the ingredients and process to a smooth chutney. This chutney will keep for 3 - 4 days, well-sealed in the refrigerator, and is a great compliment to beef kebabs, chicken tikka, samosas and pakoras.
