and if it heats up and it starts bringing the chicken over 142 the food begins to cook and cooked chicken and raw chicken together causes salmonella its called cross contamination this is the problems with this equipment unless it is all pit in a fridge since a freezer will freezer the chicken and will be harder to cut

yes they do its 2 to 4 hours between 32 and 142 degrees just when ur cutting all that chicken parts or germs of the previous chicken are left over so it would have to be cleaned every 2 to 4 hours its just its a large piece of machinery
