IT depends upon views most HINDU/INDIAN vegetarians do not use eggs or meat & sea foods but consider dairy products such as milk, butter, ghee and cheeses as acceptable IN OUR VEGETARIAN diet. Making an EGGLESS "EGGPLANT" DISH was the intended pun here and had nothing to with the super-duper views of food lovers/enthusiasts who do not eat meat/seafoods/ aniaml-enzymes. EVERY ONE IS entitled to their own views;

2ndly the idea was to expose my friends to ITALIAN FOODS OR INDIAN FOODS. JUST ENJOY.
