this is certainly not the way to properly stir-fry beef. You season them with rice wine, salt a a touch of sesame oil. You heat the oil in wok an then put in slices of ginger and several whole garlic, then you put in the beef.

@Jamiesyme999 Have to admit that despite making beef stir fries for about 20 years, I do not know my cuts too well. I just look at the cooking time on the pack... it's usually quite obvious what will be a pleasure to eat coming out of the wok & what will be annoying.

@IID0UGII Oh, is it only chefs that are allowed to have an opinion here, then? I agree with him actually; in my experience it's not necessary to use as much oil as he shows. And then having to drain?! wtf!

@LoveShiya Nobody ever said that it was and so what? An intelligent chef will always adapt his list of ingredients according to what's good locally.

@CommandoRunningMan Hmm. given the choice between beef that's tender and delicious 1 minute after hitting the wok or beef that's been marinaned in water?! and later rinsed?! what would you rather have?
