Starting seeds can be done in individual pots, but we discovered these "Jiffy" systems that are like mini-greenhouses. The peat trays are for individual plants that you can just pull apart and plant directly into the soil. We used them last year and they worked great. The strips are filled with a mixture of seed starting soil and potting soil. I did a 2:1 ratio of potting soil to seed starting soil. You just wet the peat strips, fill them with your mix, and plant your seeds according to the directions on the packets. Pop the clear lids on and keep them moist, not wet. Keeping them out of direct sunlight it important, as they will cook your seeds if it gets too warm. In a week or two, we will start having growth.
