    What are the must have pastes to cook Korean soups and stews?

  • There are two must-have pastes in Korean cooking. One is called '된장' [Doenjang] - a soy bean paste (like Japanese miso but thicker). The other one is called '고추장' [gochujang] - hot pepper paste.

    Some Korean might argue with me but I believe for spicy soup or stew, people use more of hot pepper powder than hot pepper paste to get cleaner taste.

  • Ok... I must be the only one wondering about the quantities of the ingredients to make the sauce. How much water? How much soy sauce? How much honey etc? Did I miss something?
