HI! Tonight, we are doing a family favorite, and something a little bit different, Cincinnati Chili. For those of you who are not familiar with this, it is simply chili served over pasta. I also understand that traditionally Cincinnati Chili has a lot of cinnamon in it, mine does not, however, I made my own chili seasoning to use tonight. Here is what you will need:
2 pounds of ground beef
1 28 ounce can crushed tomatoes
1 tomato can of water
1 14 ounce can chili beans with sauce
1 14 ounce can of dark red kidney beans drained and rinsed.
1/2 cup homemade chili seasoning (Recipe below)
or: 2 packets of your favorite chili seasoning I like French's Chili-O
Brown your ground beef and drain it. I usually put it in a collander and run hot water over it, you may not want to go that far, but drain it as well as you can. Then add the crushed tomatoes, water, both beans and seasoning. Stir well and simmer over medium heat for about 20 minutes until bubbly and thickened. You may choose to simmer longer, depending on how thick you enjoy your chili. Serve over hot pasta with cheese, onion and a dollop of sour cream. Enjoy.
If you want to make your own chili seasoning, here is how I did mine;
1/4 cup chili powder
1/4 cup corn meal (the finer the better)
1 Tablespoon each:
Garlic Powder
Onion Powder
Ground Cumin
Crushed Red Pepper
Whole Oregano
Salt
Cracked Black Pepper
Blend spices well in a bowl and store in an airtight container, I used a jelly jar. This made about one 1/2 pint jar which is one cup and I used half of it in the chili recipe.
Now, this is just a quick pan chili, you can do this in the middle of the week or on a cold rainy night to satisfy that comfort food yen. When you serve it over the pasta, you get two benefits, 1, you stretch your food bill, by adding the pasta, and 2 you get another meal out of this pan of chili, have it later in the week on chili dogs, make chili and eggs, or just take it for lunch. Any way you eat it you will love it and you really didn't spend that much money on this meal either! So I hope you enjoy this, and I hope you like it, thanks for watching, rate and subscribe. @Ricjamez101 Since this video is well over a year old, I understand that and have since learned the error of my ways. In our family we have always referred to this as Cincinnati Chili. I understand that this regional favorite is made differently than I have prepared it. If you have a good recipe for this dish, you should make a video and let us see what the real thing looks like. by now you know this is more like a tex mex chili and not cincinnati. btw so happy to see someone doing video with a nice clean stove especially the rings. some ppl on YT should be embarrassed to show where they cook..yuck

@KissHope I agree about the clean stove thing! I try really hard to make sure that my kitchen is clean before I tape, because I would be so embarrassed to know that anything should look less than spotless. I mean we are not perfect by any stretch, but I do my best. As far as the chili, I have been schooled that this style is more than just served on top of pasta. Thanks for watching and commenting. Sorry but not Cincinnati Chili. THe spices are what make Cincinnati chili stand out. Also....Beans?...nuh uh....

I realize that this is not authentic "Cincinnati Chili" This is what we have always called chili over spaghetti in my family. If you would like to see a really great authentic version, check out "bettyskitchen" channel. She is great and she does an authentic version. This is just what we do and we think it is fun.
