Taiwanese hot pot is as known as 火鍋 (huo guo) or shabu-shabu. The best English term to describe is Chinese fondue. The restaurant we went to has personal ones where each person gets to choose the type of soup and veggies/meat. While the hot pot is kept simmering, ingredients are placed into the pot and are cooked at the table. Typical hot pot dishes include thinly sliced meat, leafy vegetables, mushrooms, wontons, egg dumplings, and seafood. The cooked food is usually eaten with a dipping sauce.
