This is rice porridge with chocolate flavor. This is usually served in the morning. When I was a kid, I ate this a lot because I like sweets. And it was really hard for me to eat breakfast because I wanted to play as early as possible. So, mom would cook this just to make me eat breakfast.

I like my champorado served cold and really thick. So what I usually do after cooking it is let it cool down and put inside the fridge for a few hours. It will get thicker as it cool down. Then when it's cold enough for me, I would take some in a bowl and put a lot of milk or cream, whichever is available.

As you all know, I am expecting my first baby, and I was diagnosed with gestational diabetes. I was so frustrated because I love sweets and my doctor specifically told me not to eat anything sweet. I have to go through a major diet change and boy it's hard. I switched from white rice to brown rice. I tell you what, it was not bad at all. In fact, I am getting used to it. I even find brown rice to be a lot better that white rice when it comes to taste. That is why on this Pinoy recipe of champorado, I used the leftover brown rice. And instead of using sugar, I used the artificial sweetener. I was really tempted to use the chocolate milk, but I don't want my sugar level to go up high again. And you know what? My healthy version of champorado is actually pretty good. The brown rice complemented the chocolate. So, I am not only encouraging you to try this recipe, but also to try to be healthy. It may seem hard at first, but it's really not.

  • RICE is chemically no different from sugar, WHITE or BROWN. So if you need to loose weight use oats instead.
