DMT sells double sided diamond stones. Very good. But nothing beats waterstones for edge quality.

whats the diff between diamond and waterstones? Arent both meant to sharpen the cutting edge of a knife? Please help, which should i buy for my Miyabi chef knives?

The diamond stone is hard wearing and has a long life span, Trend stones are manufactured using Monocrystalline Diamond which is a single structure that does not break with use.
It is an ideal stone for honing carbide tooling and is fast cutting, whereas Waterstones will wear rapidly and must be flattened periodically, they are also somewhat fragile and must be stored and handled carefully.

Recommended knives would be a 10” or 12” diamond steel Part number DWS/DS10/F or DWS/DS12/F, these are a fine grade Steel 600 grit, 25 micron.
