In this video, Betty demonstrates how to make Rolled Dumplings for the Chicken and Dumplings Thanksgiving entrée. These are the best!

Ingredients:

3 cups self-rising flour
1/2 teaspoon poultry seasoning
1/3 cup butter
1 cup milk
snipped fresh parsley for garnish

In a large bowl, combine 3 cups self-rising flour and 1/2 teaspoon poultry seasoning. With a pastry blender, cut in 1/3 cup butter, until mixture is crumbly. Add 1 cup milk and stir, just until dry ingredients are moistened. Place dough on a lightly floured surface. Roll to 1/8-inch thickness. With a knife, cut rolled dough into 1-inch strips. Cut each strip into 1-inch squares. (At this point, you may freeze the dumplings, and use them straight from the freezer when you finish your Chicken and Dumplings.) Bring reserved chicken broth to a boil and add reserved chicken chunks. Return to a boil and drop dumplings, a few at a time into boiling broth. Stir gently as you add the dumplings. Cover, with a lid that fits, reduce heat to low, and simmer, stirring occasionally. Cook until dumplings are tender, about 25 to 30 minutes. Transfer to a large serving dish. Grind fresh peppercorns on top and snip some parsley over the top. Serve immediately. This is the entrée that I have prepared for your Thanksgiving.   • Betty, this looks SO good!!! If I wanted to make this dish in ONE day (say for supper), how much time would it take (prep & cooking)?

  • @806nena I would plan for about 3 hours in the morning, and then heat it up at suppertime. You will not be working the entire time!

  • @bettyskitchen where I am from, I can't seem to find poultry seasoning.. Is this similar to a chicken bouillon?

  • @farhat2tube No, it would be more herb-flavored. You may substitute sage.

  • You are the only chef I have seen who knows to add the chicken to the boiling broth BEFORE adding the dumplings. This makes the chicken incredibly tender and flavorful! Love your videos. This looks delicious! Oh BTW I have seen one chef add chicken broth instead of milk as the liquid for the dumplings.

  • What a great dish, made it for my girlfriend's family and they loved it! The only bad part was that it made a gigantic batch and I hate to freeze things!

  • Betty I made turkey soup with my leftover turkey from Christmas dinner and used this recipe for the dumplings. I was not expecting much they seemed to thin and a little plain, but i must say they were great, they held together good and and had really good flavor. Thanks for the recipe and sorry I doubted you.

  • You guys, its easier to cut the dumpling with the back of the knife. Not the handle, but the other side of the sharp side.

  • Betty this looks very good. You mentioned that we may think that chicken & dumplings are an odd choice for Thanksgiving Dinner. However, this is a very common dish for Thanksgiving and Christmas dinner here in the South. I enjoy all your videos and since I'm from the same state as you; I am VERY PROUD of you and brag on you all the time to my friends and family! I'm from Mt. Sterling, KY.
