  • @dejumadre Wheat, but the gluten content I'm not sure of - some places say high gluten and some low gluten. I'm inclined to believe high gluten.

  • @Zyyler55 bread flour, got a lot of protein inside, after some process,protein absorb water then it grow gluten, then it came so stretchyable. hope you can understand...
