In this video, Betty demonstrates how to make a wonderful, appealing appetizer, Jalapeno Poppers. These are hollowed out jalapeno halves, filled with a mixture of cheeses, onion, mushrooms, and bacon, and baked in the oven until delicious!

Ingredients (for about 2 dozen poppers):

4 slices bacon, chopped in 1-inch squares
1/2 to 1 tablespoon extra virgin olive oil
½ cup onion, finely chopped
½ cup mushrooms, finely chopped
8-oz. cream cheese, softened to room temperature
½ cup finely shredded Monterey jack cheese
½ cup finely shredded mozzarella cheese
jalapeno peppers, washed, and cut into two halves lengthwise, with seeds and fibers removed

Fry 4 slices of bacon (chopped) in a skillet over medium heat. Drain on paper toweling, and set aside. Discard bacon grease and add 1/2 to 1 tablespoon olive oil to the skillet where the bacon was fried. Add ½ cup finely chopped onionand ½ cup finely chopped mushrooms to the olive oil in the skillet and saute until softened. In a medium mixing bowl, combine sauteed onion and mushroom, the crisp, fried bacon bits , 8-oz. softened cream cheese, ½ cup shredded Monterey Jack cheese, and ½ cup shredded mozzarella cheese. Mix well. Stuff each jalapeno pepper half with a generous amount of the cheese mixture. Bake at 350 degrees for about 15 minutes. Place on a serving plate, and serve immediately! These are great for sports event party, or as an appetizer to a Mexican-themed meal! Enjoy!!! --Betty 

  • if i follow this recipe using the whole pepper technique you talked about (instead of slicing them in half completely) can i coat these in a beer batter and fry them? should i still bake them in the beer batter? my first time making these any help would be great thank you

  • @Andonisusbb I think I would prefer them fried. You could do them either way, but fried comes out best.

  • i made these again for a get-together and this time instead of cutting them in half I slit them from stem to tip and pinched them open so i could scoop out the insides with a METAL BABY SPOON.....the metal baby spoon worked wonderfully because the edge of the spoon was just sharp enough to get all the membrane and seeds out.....

  • that was an awesome recipe, my family loved them!.....wish i would have thought to wear gloves before i started de-seeding the peppers because my hands burned for days.....

  • @KroppIllinois Thanks for the great feedback! I really appreciate it! Yes, the heat of the jalapenos can really sneak up on you. It can make your skin burn and you really shouldn't touch your eyes!
