We use our sous vide experience and some great equipment (Alto-Shaam Combitherm, Sammic vacuum machine, and Vitaprep blender) to make foolproof pastry cream! No more standing over the stove and stirring!
It was cool but gave me a headache watching it. To much work if your doing large batches of this. My is was there a different texture or better taste because if its not then what is the point of doing it this way ?
