Thanks for the video! Also, to cut carrots into long strips like a french-fry is to Julienne them, iirc.

Where's the paté? The spicy mayo? Do yourself an immense favor and find a Vietnamese grocery store. I don't know if there is a sizable enough Vietnamese immigrant population in your area to support such a store, so results may vary. There are these meats, like cold cuts, that you'll find in the refrigerated section, but they're made with different cuts of meat and have different seasonings. There you'll also find the paté.
