Christian symbolism would recognize a crocodile's mouth as the gates of hell, quite appropriate as the crocodile is an externalization of Hook's flaws; a grizzly ticking embodiment of his own mortality. It is Hook's own nature, this beast, with which he is fated to fall prey.
This is my favorite piece of music in the entire movie.
