This happened because the education system, like all systems, does not educate people on their rights and to question law. A person may learn a bit of math a bit of how to wright a book, some what biology and other skills they might use once in 10 years. But for the evils of this world that attack everyday of financial systems and legal systems are not guarded against, no one knows how to protect themselves from it.

One thing to note... The conviction you are talking about happened in Illinois. We have two party consent, so if you record an officer it is a felony.

@vaporman442 You're absolutely right in some states it's either a misdemeanor or felony to record somebody else even in open public areas without their consent except police they can record you at anytime they want with the without your consent even in Chicago that's why I always say keep quiet when dealing with cops.
