Oh, my goodness. That is a -major- bite. The claw marks on your belly aren't looking too happy, either.
My guess is that the water wand freaked him out to the point of fight-or-flight, and so that's exactly what he did. Have you tried just rinsing him with a large cup?
But yes...out of all the washed kitties I've seen, this one has to be one of the most poorly-behaved.
