Kabab Mahi
Fish ........................ 500 gr
Onion Juice .............. 3 tbsp
Lemon Juice ............ 3 tbsp
Salt and Pepper ....... As Needed
Zafaran ..................... 1 tsp
Liquid Oil .................. 3 tsp
Green Pepper ........... 2
کباب ماهی
ماهی................... ۵۰۰ گرم
آب میوه پیاز......... ۳ قاشق غذاخوری
آبلیمو................. ۳ قاشق غذاخوری
نمک و فلفل.......... در صورت نیاز
زعفران .............. 1 قاشق چایخوری
روغن مایع............ ۳ قاشق چایخوری
فلفل سبز........... ۲ عدد
طرزتهیه:
ابتدا 10 عدد سیخ کباب چوبی را به مدت 30 دقیقه در آب سرد قرار می دهیم تا سیخ ها هنگام کباب کردن نسوزد ماهی را پس از تمیز کردن و شستن به قطعات کوچک تقسیم می کنیم زعفران را در کمی آبجوش حل می کنیم پیاز را تکه تکه کرده و با آب لیمو ،ادویه ،نمک و فلفل ،ادویه کاری و روغن مایع وزعفران به ماهی اضافه می کنیم ماهی را زیر ورو کرده تا به مایه آغشته شود سپس به مدت 2-3 ساعت در یخچال می گذاریم تا ماهی ترد و مزه دار شود .4-5 تکه از ماهی را به سیخ می کشیم (به همین ترتیب تمام ماهی را به سیخ می کشیم) تابه تفلون یا تابه برقی را خوب گرم می کنیم 2 قاشق غذا خوری روغن مایع را روی تابه ریخته وماهی ها را هر دو طرف کباب می کنیم .

The Chelo (Chelow چلو کباب) kebab is the national dish of Iran. Served on skewers over a bed of rice, this recipe is basic, yet full of flavor. I prefer to grill this over a charcoal grill than over a gas grill because the flavor is much better. If you do not have a grill, use the broiler in your oven.
Ingredients: 1 lb. ground beef or lamb 1 teaspoon cumin 1/4 teaspoon black pepper 1 large onion, chopped
Preparation:
In a mixing bowl, combine all ingredients. Combine well using wooden spoon, or with your hands. Mixing with your hands allows the mixture to combine better.
Take about 1/4 meat mixture and make into a ball. Place ball through flat skewers, and shape into square cigar-like shapes. Repeat with remaining meat.
Place on grill and cook about 4-6 minutes each side, until meat is no longer pink and is done.
Serve over a bed of white rice and pita bread. Serve with a salad, like a fattoush or tabbouleh.

چلو کباب برگ
Serves 8.

Total Time: 30 minutes
Ingredients: 2 lbs beef sirloin or tenderloin, cut into 1 inch cubes 1/2 cup olive oil 1 tablespoon white vinegar 1 teaspoon cumin 1/2 teaspoon coriander 1/2 teaspoon paprika 1 teaspoon garlic, minced
Preparation:
24 hours prior to grilling, prepare marinade by combining olive oil, vinegar, corinader, garlic, cumin, and paprika. Pour marinade into freezer bag and add beef cubes. Allow to marinate in the refrigerator until ready to grill.
Remove from refrigerator and thread meat onto skewers that have been sprayed with cooking oil.
Spray grill with cooking oil to prevent sticking. Grill for 5-7 minutes on each side or until desired doneness.
Serve over a bed of white rice, salad, and pita bread.

Lamb is marinated in a spicy blend of herbs, creating a flavorful lamb kebab.

Ingredients: 2 lbs lamb fillet, cut into 1 inch cubes 2 green peppers 2 pints cherry tomatoes 2 onions --------------------------------------------------------------- For the marinade: 2 tablespoons lemon juice 1/2 cup olive oil 1 teaspoon garlic, minced 1/2 teaspoon cumin 1/4 teaspoon turmeric (or more if desired, depending on how spicy you desire) pinch of ground red pepper or cayenne
Preparation:
Up to 24 hours prior to grilling, combine marinade ingredients and pour into freezer bag. Place lamb cubes in marinade and refrigerate until ready to grill. Be sure all pieces of lamb are coated well.
Prepare vegetables. Wash and dry veggies. Cut green peppers and onions into 1 inch chunks. Set aside.
