She was pissed because she thought she loved him and he didn't say it back. It's too soon, it was infatuation. And he knew that, guys usually do. Females are too quick to fall in love, the whole little girl fairytale thing, can't wait to grow up, get married. Boys don't do that.

I think Kevin seemed distant cos he was confused. The whole situation must have been pretty bizarre/surreal to him. Suddenly he was traveling all over the world/having a fling with this very famous person after putting his old life (a very different life for that matter) aside. Then out of the blue, on camera, she tells him she loves him. How could he even be sure she wasn't joking? They barely knew each other. Not surprisingly his reaction was what it was.

Only guessing here but the fun times with Kevin probably made her feel a little more free inside and not as lonely anymore. That's what she really loved more than anything; how he made her feel, not the person himself. Not saying she didn't have real feelings for him, I think she did, but she also had a void; a desperation to love/be loved, so her feelings for Kevin were heightened. I think she got confused and thought she was in love because she really wanted to be. It's understandable.
