Ingredients

* 1 cup or 235ml chocolate cookie crumbs
* 1/4 cup or 60ml butter, melted
*(12 oz. of Ricotta Cheese)
*16 oz. full-fat Cream Cheese
*1 1/2 cup. or 355ml Sour cream
*1 teaspoon Lemon or Orange Zest
*2 teaspoons Lemon juice
*3 Large Eggs
*1 tablespoon vanilla extract
*1/4 cup or 60ml + 3 tablespoons white sugar
I didn't add any Ricotta Cheese I could not find any KOSHER. (but it's still tasty!)
UTENSILS:
mixing bowl
mixer or whisk
spatula
9 inch springform pan
1. In a medium bowl, mix together cookie crumbs, 3 tablespoons sugar, and melted butter.
Press mixture into the bottom of a 9 inch springform pan.
2. In a medium bowl, mix together eggs, sour cream, vanilla, lemon + zest,
3. Add the cream cheese slowly, and sugar slowly.
4. for the topping cook One pint of Blueberries and one pint of hulled and sliced Strawberries
with 3 tablespoons of sugar for about 10 minutes.
5. Bake at 350 for about 45 min till it has a little of brown, with a giggle in the middle.
Cool, (cover with plastic wrap), and refrigerate for 8 hours before removing from pan. Serve enjoy.
Tip
using cream cheese at room temperature is easier to blend.
