2 - "I am the kitchen Manager, and so it is my responsibility that the kitchen is clean and practical" -- A manager manages "whatever", a manager is not a maid. If you keep on cleaning THEIR shit - what they are RESPONSIBLE for - they will keep on doing it. By you cleaning their shit you are also participating in their deception - they dont clean because they are fucking lazy. So, as a MANAGER (and not a maid) I suggest you TALK with them (no notes, be direct) because that is what a manager does
