Here is a video of our imported wood-burning ovens. What makes them unique is the off-set firebox. We actually load the wood on the side of the oven, which allows us to make use of the motorized stone deck. This is very helpful during busy times as it makes the cooking process more efficient. The pizzaiolo does not have to turn each pizza. I personally like the old-school ovens, but this is definitely helpful in a commercial situation.
