I'm from Barcelona and the original Allioli does NOT have mustard. Sorry! Still, great video.

The "real deal" alioli (pronounced "alley-all-e", and meaning "garlic and oil"), is in fact made with just some garlic cloves (and some salt), smashing them to a pulp with mortar an pestle, and then adding aproximately 150-200 ml of extra virgin olive oil into the mortar, DROP BY DROP as you stir with the pestle, WITHOUT STOPPING AT ALL, until you get it emulsified (you can easily go on for about 1 hour, it's a very exhausting process).

The real name of this sauce is "Allioli". In Valencia (near where I live in Spain) it means "All i oli" (Garlic and oil). Pronunciacion is similar and the result almost the same. :) Like you enjoy this.
