usually, the brown stuff is iron oxide leaching off your plate material ... we have found that 304 grade stainless steel works but leaches a bit where the 316 and 316L grades of stainless are pretty much bullet proof ... the more volts you hit it with, the more oxides will leach ... have also seen a lot of gunk precipitate out of tap water, but the reddish brown stuff is probably rust from your plates being eaten away ...
