This level appears for me in Black and White. How do you get it in color?

I think each level becomes in color permanently once you've completed it in all its modes.

Also, any level is in color I think if you play in Classic mode.

I actually want to do a black-and-white video or two :)

@sloobro yeah, once you've completed the level, you can choose video filter with the L2 and R2 button before choosing the stage. Classic = with color, and whenever you do a classic level, it of course uses the classic filter! =)
