To pivot on the heels from that position means you have shift the weight back and causes a momentary loss of balance.
How come none of his wooden dummies have legs? There's supposed to be a leg in the middle sticking out for a Wing Chun dummy. There are quite a few kicking techniques against the leg.
Some teach toes some teach heels. Heels are harder to master but better once you do. When you pivot on your heels, the core of your body stays in the same place, maintaining your balance. If you get slammed while pivoting on your toes you will be moved. Try it.
@otleybull I think because they often move around and switch dummies while practicing, and people trip and crack their heads.
