If you don't know what ganache is you should be poked with a stick.

White chocolate ganache would work the same.
Regular chocolate is just crystallized fat from the cacao plant (also known as cocoa butter) with cocoa solids in it. White chocolate is the same but with the cocoa solids removed (so it's just the cocoa butter).
White chocolate's and milk chocolate have about the same melting point, which is about 2 degrees farenheit lower than dark chocolate.

OK, um ... YUM! I love chocolate! The strangest place I have seen 72% cacao... Marshalls lol! (or Tj Maxx or something like that)
Anyway, very cool recipe. Add some milk and you have some amazing hot cocoa! mmm. Grab a biscotti and a good book and call it a day.
