texturising the milk is when you place the wand tip under the surface of the milk when steaming. What you called texturising is actually tapping and swirling, to achieve a "wet paint" finish.
I bought the 800esxl again and this time I got a defect free machine. Seriously, I had to return the first two machines because they had problems like leaking all over the counter on the first shot and a dribbling steamless steam wand. The second machine vibrated like crazy so much that the water reservoir wouldn't stay put but kept creeping out of its nook.
I tried about 5 different espresso machines after that and none of them game me the great shots like the Breville 800.
"A little less coffee here, a little less water, but same amount of coffee."

get yourself a thermometer, and stop steaming the milk on 55-65°C ...more than that you just burn the milk....that solved my very same problem
