is it just me, or did it not really turn out perfectly? he couldn't find a way to do the duck properly with the skin on.

For all none Brits. Unless you are a Brit then you just won't click re Heston. All other Chefs go one route but Heston goes another. Thats why he's so famous here. Take a path , put all the other chefs on it. Then put a branch off the path. Make it real kinky and shift it 100 miles off the other path. There you will find Heston Bloomenthal in all his maginficent glory. You might watch a few video's but that doesn't tell his story. Think on, this "was" a TV show for entertainment. Get it ?

I am not even a chef and i am watching this in horror come amazement at the same time, at the length this guy will go to just to get roast peking duck.

its all in the duck prep.
and yes it can be done in a regular roasting oven.
you just need to let the duck stand and not sit on a pan.
you wont get peking standard but it good enough.

it is possible to do a twice cooked duck at home, if you know what youre doing, its all in the prep ;-)

How is it confit duck? Doesn't that require it being cooked in its own fat?

confit just means preserved. short for confiture which means preserve (eg confiture de fraises is strawberry jam in french).

generally people cook duck confit in its own fat, but that doesn't make it by definition duck confit.

this is really awesome, but seems like a huge headache to do at home. it does sound like a lot of fun
