dont make how-to... when you actually dont know how to do it.
and she is even working @ a café
follow these steps instead:
-fill your filter AND make sure the grounds are evenly spread before tamping
-hold the tamper with your index and thumb at the base to help keep it even and easely spread the grounds.
-tamp first with moderate pressure WHILE turning the tamper to even the grounds even more
-tamp a 2nd time with as much pressure you can / around 15kg make sure that the result is level
