Kaiten-zushi literally means "circulating sushi." Plates of sushi are set on a conveyor belt encircling the serving bar, and as the plates pass by, the visitors select what they want. Prices for kaiten-zushi are generally lower than at usual sushi restaurants.
However, this kaitan-zushi circulate a half around.

Though this shop is noon, there are few visitors.
Because a visitor does not take a plate even if shop assistants put a lot of plates, an ingredient dries.
Therefore we order the sushi which oneself wants to eat directly to shop assistants.
