@yoitsdan because after a while you get immunity to the spices/chilli, I can eat a vindaloo without breaking sweat, 20 years ago I would have burned alive.

Fun fact
Soda or even water, are the worst to pacify a spicy tongue. Milk is the best because it can isolate the spicy oils that stick to the tongue whereas most other liquids just wash right over it.
