Rice Balls from Debbies Kitchen
Ingredients 1 pound chop meat (you can use turkey chicken or soy whatever you like) 4 cups cooked rice (you can use brown or white) Two to three stalks celery (you can also sauté some garlic with that if you want) Egg wash Breadcrumbs
Directions Sauté celery and garlic in a little bit of oil in the frying pan. When celery and garlic are soft add chop meat and brown. Meanwhile cook the rice however you do it (I do it the way my friend Sue does it. She sautés a Vidalia onion in a little oil then I throw my rice in and I use a fat free chicken broth instead of water to cook the rice). After the chop meat is cooked through season with the same ingredients you use to make your meatballs (I put salt pepper garlic powder grated cheese and bread crumbs and I throw that all right into the chop meat mixture in the frying pan). When chop meat and rice are fully cooked and prepared combine the two in a large bowl, let it cool down and put into the refrigerator overnight. The next morning prepare the egg wash and flavored breadcrumbs and use a fry daddy or saucepan to fry the rice balls. Start making the balls, dip in egg wash and bread crumbs and deep fry until golden brown and carefully place the cooked rice ball on a paper bag to drain. Continue making balls and frying, I do three at a time. The whole process is a little tricky but youll get your own groove on once you start the process.
FYI: You can add your own special ingredients if you like, your special touch, a different variation if you will, by adding mozzarella and peas to the middle before you start frying, or my friend Diana says that her grandmother adds golden raisins and pine nuts. Do whatever you want I dont really give a shit theyre your balls make them the way you like them! Just enjoy after you make these because they are really a big hit at the holiday table.
