Great job, I am really impressed by the video and your technique. I was always told not to smoke a turkey bigger than 14 lbs as it remains in the danger zone too long. Do you find this true? Brine is incredible. Thank You

Is it thanksgiving yet? This video made me feel so hungry I'm going to go get a turkey sandwich. Funny thing is I don't usually like turkey.

Apricot wood was quite good. I was surprised how dense it was. It produced a consistent slow burning fire which allowed me to maintain the temperature. I used 15-17lb of wood, which towards the last hour of the 8 hour smoking session ran out, so I resorted to wood charcoal. I definitely would recommend apricot wood, though it was hard to source.

Every year we try adding a new facet to the smoking. Last year we introduced rotisserie, which was quite successful. This year we'll be using apricot wood for smoking combined with last years success of the rotisserie. Stay tuned for updates after thanks giving.

As for the danger zone, as much as I know the range is 4°C and 60°C (40°F - 140°F). In this range the bacteria grow quickly and cause food borne illnesses. That is the reason why I add the extra ice and place the turkey in the fridge to keep it below 40°F. Then soon after I take it out of the fridge, I put the Turkey in the grill that's been already heated up to 250°F, not allowing the Turkey to remain in the danger zone

Cowboy Hardwood Lump Charcoal is the only charcoal I use. I try to avoid mesquite for most smoking purposes because of its tendency to burn hot and fast. I agree that adding anything different fluids to water pans however using them in a mop sauce will add flavor to the outside of the bird.

I also use the Cowboy Hardwood Lump Charcoal, and have to say that over the past few years I have obtained superior quality fire using this brand.
