I made a really noob mistake and bought a high carbon Santoku knife. It was incredibly sharp and useful, but the first few times I cooked with it I used a glass cutting board. It turns out I "rolled the edge" and basically ruined the knife. I can get the knife re-edged but it would cost more than I paid for the knife in the first place.

@Derrek: hey I just read today that the non sticky pans, if scraped the non sticky layer gets toxic or something like that
