Rice Pudding, called Arroz Con Leche in Spanish, is made by Chef Remy using the stove-top method. It is made easily, quickly, and economically with only four ingredients and garnished with nutmeg, limes, and raisins. Chef Remy has also made Rice Pudding using the oven method as demonstrated in another video. This is one of several ways but seems to be the easiest to put together using only one pot. This recipe will produce eight to ten servings and can be served from a single bowl or ten custard cups if preferred.
INGREDIENTS:
1 cup short grain rice 1 stick cinnamon
1 ½ cups water ground nutmeg
1 14oz. can Sweetened Condensed Milk lime rind
1 12oz can evaporated milk 1 cup whole milk
METHOD: In a 2 quart saucepot over medium heat add water, rice, and a cinnamon stick. Bring to a boil, reduce heat to a slow boil uncovered. Stir occasionally. When water has almost completely been absorbed, add the three milks and continue heating slowly, stirring, to achieve a slow boil. Do not walk away. Keep stirring until rice pudding becomes thickened. Discard cinnamon sticks and pieces. Raisins may be added if preferred. Pour into custard cups or large bowl. Garnish with fresh or ground nutmeg. Some folks also prefer small slices of lime rind.

  • This is the way I cook Arroz con leche. I also use sugar, because we like it very sweet.
