These delicious baked pears are served with a quick home-made ice cream for a luxurious Italian dessert.

It serves 4, takes about 20 minutes to make and about 40 minutes to bake, plus freezing.

INGREDIENTS:
- 50g unblanched whole almonds
- 8 amaretti biscuits, about 100g
- 40g light soft brown sugar
- few drops of vanilla extract
- 1 egg white
- 2 tsp lemon juice
- 4 large, ripe and juicy pears
- 150ml pear or apply juice

INGREDIENTS FOR THE CUSTARD & YOGURT ICE CREAM:
- 200g wholemilk or Greek natural yogurt
- 500g low-fat fresh vanilla custard
- 2 tbsp clear honey
