Cultivated as a grain for 8,000 years, today, Amaranth is gaining popularity as a crop of the future. It's a very adaptable, drought-tolerant and hearty plant; in fact, most species of Amaranthus are classified as a weed (commonly known as pigweed).

It's also a kind of superfood; it's high in protein (12-17%), calcium (more than spinach) and amino acids like lysine (deficient in most grains). The leaves are high in vitamins A and C, riboflavin, and folic acid.

  • Funny you should put this up, I just found out about Quinoa (Keen-Wah) and saw that Amaranth is listed with every recipe and gardening method, I just planted the Amaranth seeds I got on ebay 2 days ago, its a pretty freaking amazing food source for being a fast growing weed (pigweed) Dont tell the GOP, they will repeal it if this gets out!

  • I purchased Amaranth seeds for my garden this year. I had 2 kinds, Amaranthus Cruentus and Amaranthus Gangeticus. The A. Gangeticus had black seeds and were half as big as A.Cruentus(which has white seeds), so I threw out the Gangeticus and just planted the Cruentus seeds.
