そば打ちの「切り」をアップで撮ってみました。こま板の枕は垂直ですが包丁は内側にやや傾いて(5-6度?)入っています。いわゆる「起こし包丁」と言われる切り方になっ­ています。麺の切り幅は1.3mm程度でしょうか。
