@Acorli Haha I hear ya. Last week I had a lady tell me as I'm pouring her capp, "No, wait--not so much milk! I want a lot of foam!". I try to tell her as nicely as I can that's not really a capp and she tells me SHE'S been to Italy so SHE knows what a cappuccino is, blah, blah, blah.... :/

That's a latte with extra foam, not a cappuccino. For a true cappuccino you should pour the milk into the espresso BEFORE it has had time to separate--basically the instant you finish steaming it, you should pour, causing the perfect marbling effect of espresso and milk/foam. After pouring, the drink should separate ITSELF into espresso/milk/foam, while keeping the beautiful "marble" on top of the drink. This demo is a lazy way to make a "faux" cappuccino.
