Elaina, I just tried almond milk yesterday with cheesecloth, and needless to say today I searched for alternatives and found your shop via EverydayDish.

How easy does the the bag come clean? Can it just be rinsed, turned inside out and left in the dishwasher?

The fiber doesn't have anything left really, it tastes kind of like sawdust, but does make a good fiber for cakes and such. Most of the nutrients will be in the milk. Wish I had an actual analysis for you, but either way, it's so much better for you than cows milk or boxed milks.
