I have a Pistol Shrimp, and all he does all day long is dig and repair tunnels. If you think this is cool, which it is, you should check out a Jawfish. They can both move insane amounts of substrate. My Pistol Shrimp has tunnels all around my tank, except close to the Jawfish.
