@cappykay The almonds are soaked first over night to start the sprouting process and to wash out the enzyme inhibitor that nuts/seeds have in them. The reason she blanched them in the hot water was to remove the skins and only to remove the skins. You do not have to do that after you soak/sprout your nuts usually but to keep the nut cheese looking like and feeling like traditional cheese is why roving the skin was done here. Probiotics is the culture used to start the fermentation.

Can you explain the pro biotic and how you use it....II am very new to this raw concept.
Can you also explain what you mean by sprouting the almonds - does this mean you soaked them first, then poured boiling water over them? Lastly, does this cheese and the other cheeses mentioned generally have the consistency of a cream cheese?
Thanks for sharing Tina. Do you add the salt or other seasoning after fermented or is it best to add them in the blender?

@clairepatt1 I add seasoning after the cheese has fermented. This way, you know exactly what flavors you're working with because not all cheese has the same fermentation taste;) Enjoy! Tina Jo

How can it be raw if you put the almonds in boiling water (over 118 degrees)?

@leronk Hi Leronk, The almonds have been sprouted prier to their blanching which helps them to release their enzyme inhibitor. The blanching does destroy some of the enzymes, however not all of them. If you are trying to maintain a 100% raw diet, try using different nuts or seeds to create your cheese (those without skins). Hope this helps. Much love, Tina Jo
