椒鹽無骨豬扒 無骨豬扒500克、麵粉3湯匙、紅辣椒1湯匙(切碎)、蒜頭1粒(切碎) 淮鹽:鹽1湯匙,五香粉1/4茶匙 醃料:(一)鬆肉粉半茶匙或食用梳打粉、1湯匙水 醃料:(二)蛋半隻、淮鹽半茶匙、糖半茶匙、生粉1茶匙 1.以乾鑊把1湯匙鹽炒熱後,離火加入五香粉炒香成淮鹽。2.無骨豬扒用刀背剁鬆後切成細件,先與醃料(一)拌勻,再與醃料(二)拌勻醃30分鐘。3.燒4湯匙油,把與適量麵粉拌勻的豬扒,放入熱油內煎熟,取出備用。4.再燒半湯匙油,爆香紅椒及蒜頭,豬扒回鑊,加半茶匙淮鹽兜勻。
