it's great and everything, but i don't think flour is worth that much work for such a little output. it's not cost effective.

a filling you can try is pumpkin cheese and nutmeg. (we add amaretti as well but I don't know if you can find them, they are almond cookies)
And you dress them with butter and cheese (parmesan..) enjy!

We call Sweet Potatoes and Yams different things. Yams are more like Potatoes, but orange. Sweet Potatoes are mushier. In The South. USA.

I used to watch my great grandmother, who is Italian, make ravioli, ... long ago. I could use some pointers. Only did it once. I know what's a good filling, besides sweet potatoes.
In North. USA. They think Sweet Potatoes and Yams are the same thing. They only have Yams.
I wish I knew how to do what you do, all the stuff.
