  • I like the curry sauce w/o the coconut milk. Can I just use regular milk ?

  • I haven't tried with regular milk but you can try. Otherwise, don't use the coconut milk at all.

  • Manivan.. can you recommend a good curry paste? ty Pam

  • My web site has the curry paste recipe. If you are purchasing one, make sure the ingredients listed on the label is similar to the ingredients listed on my website and also that the product is from Thailand.

  • you can also use baby corns =] so good!

  • what kind of paste is that? green or red?

  • It still tastes good without coconut milk (one time I ran out so I just made it with some chicken stock instead), but it's not as yummy and rich.

What I like to do is coat the chicken in corn starch, it gives it a nice crust and absorbs all the good flavor, then when you mix it all in it also thickens the sauce.

  • No, because the coconut milk also has oil and other minerals that add texture and subtle flavor to the food.

Regular milk should only be used in Italian food or other Western meals because of the protein in the milk.

Milk doesn't go well with the other spices in Asian food like mango and fish sauce.

  • Dose boiling the bamboo for that long soften it, or do anything else besides take the coloring out as you said?

  • The food network show should hire you and give you show of your own for Lao and Thai foods. Thank you for sharing with us your recipes and also showing us how to cook the foods.

  • The coconut milk over comes the other flavors, I think.
