Try scoring one slice all the way across the rounded side with a bread knife, you can keep them whole.

speed up wouldn't you.

It was 5 in the morning when I tried your method. To be honest it's revolutionary!! I got my self perfectly pealed chestnuts in two minuets. Thanks a lot for sharing this video !!

what variety of chestnut is this?
-
Also to elaborate: If you boil for too long the chestnut goes too soft and so crushes when you squeeze with pliers. Boil for too little and the skin is not soft enough, and not loose enough to slide off the nut. Hope this helps. Great video.

I have chestnuts like in the video and also chestnuts from china 4 times the size that are impossible to peel by hand we tried several ideas. Then I tried your technique which worked ok but only 20% success rate. I had some spare time so experimented with different boiling times and found that the optimum time(no matter what the size of chestnut) is 1 minute 20 seconds on a fast boil(dont let the water come off the boil when you put them in).Hope this helps. I now have 100% success rate. THANKS!

IT WORKS. THANK YOU VERY MUCH!!!
I used to hate peeling chestnuts. I found your video yesterday, watched the entire show and listened to every word you said. (That was the key!!!) I tried your method this morning (preparing Turkey Stuffing for a New Year's Eve Party); haha, worked so well. They popped out so easily just like they did in your video.

ps i liked your speed shelling :)
Sounds like your nuts are dryer than they ought to be. Jan 18; getting late in the season for commercial nuts from stores; by this time most of them have been badly stored, and at best dried out, at worst, getting moldy. Give your uncooked nuts a hard pinch with your fingers; if they are dry, the shell will "give" quite a lot, maybe 1/4" or so; it they're REALLY dry, the shell may crack right then.
If they're not too far gone, soak them overnight, try again. Or- use them as dried...
