Especially about having funds for the unknown at the start.
Also, have a business model that is realistic.
If you are counting on Tuesday lunch in an area without known high traffic lunch dinners nearby being rock-solid packed to make the books balance you will begin the cash hemorrhage.
With out the funds to cushion you while people discover you are there and have a good product you may feel inclined to cut quality because you can't afford your vision any more.
Then you're done.
