We used the Alto-Shaam 20-20 to cook a full load of bacon. One of the cooks in the galley was into his third contract as breakfast cook ( on three different ships). He suggested we lower the temperature to 315f to get more even browning. The results were the most even I have ever seen in a load of bacon this size. The bacon was a little on the thin side so it was done in about 18 minutes. Thicker bacon will need to cook a bit longer but clearly this gentleman knew what he was talking about- take a look for yourself.
There are few things in this world that are better than Bacon....except more Bacon.
